This is a handheld omelet. I invented it so we could take a healthy breakfast with us.
Palmelet
1 egg 1 T. water 2 T. all-purpose flour 1 T. or more shredded cheese Any other fillings you might like, such as minced ham, cooked sausage, mushrooms, etc (optional)
Heat skillet with a little oil (about 1 T.) to medium. Meanwhile, beat egg with water. Beat in flour. Pour mixture into hot skillet and cook about a minute, until egg mixture is beginnng to set around the edges. Turn palmelet over and immediately sprinkle with cheese and fillings (if desired). After it cooks about a minute, fold palmelet in half and remove from pan onto plate to cool. Allow to cool until it is cool enough to handle. These may be served warm or at room temperature.
Variation: To make these without starch, substitute parmesan cheese for the flour (Use the kind that comes in a jar, such as Kraft) and allow to sit for a minute. Stir again, then continue as directed above.
