Cracker Jack Granola
1 cup (2 sticks) butter or margarine 2 cups firmly packed brown sugar 1/2 cup light or dark corn syrup 1 t. salt 1 t. vanilla 1/2 t. baking soda 42 oz (aprox. 15 cups) oats, old-fashioned or quick 1 - 1 1/2 cups salted peanuts, chopped
Measure oats and peanuts into large bowl and set aside. Grease 2 large baking sheets, set aside. Heat oven to 300 degrees.
In 3 quart saucepan, melt butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Then, boil without stirring, 5 minutes over medium heat to soft ball stage. Remove from heat and stir in vanilla. Add baking soda and stir vigorously (mixture will foam).
Slowly pour over oats and nuts, stirring very well, till all oats are moistened.
Divide mixture between prepared pans and bake one hour, stirring well every 15 minutes. Remove from oven and cool thoroughly. Break up, if necessary. Store in airtight container.
Makes 16-17 cups.
