No-Bake Peanut Butter Pie
Ingredients for crust:
1 1/2 cups graham cracker crumbs 1/2 cup (1 stick) butter, melted 3 T. sugar
In medium bowl, mix all ingredients until crumbs are evenly moistened. Pour mixture into 9" pie plate and press evenly to cover the sides and bottom. Set aside
Ingredients for filling and toppings:
2 cups heavy whipping cream 3 T. confectioners' sugar 1/2 t.vanilla extract 1 (8 oz) package of cream cheese, softened 1 cup creamy peanut butter 1 1/2 cups confectioners' sugar pinch of salt, optional chocolate syrup
In medium bowl, whip cream until thick. Beat in 3 T. confectioners' sugar and vanilla. Set aside.
In large bowl, beat cream cheese and peanut butter until light and fluffy. Add confectioners' sugar and salt, if using, and beat well. Add about 1/4 of the whipped cream and beat until blended, about 30 seconds. Fold in about half of the whipped cream that's left. Pour mixture into reserved pie crust and spread to edges. Top with remaining whipped cream and make it look pretty. Chill.
Cut slices and place on plates. Drizzle top with chocolate syrup.
Serves 8
