Easy Buñuelos
This is a sort of Mexican doughnut made of fried pâte à choux (cream puff dough)
1 cup water 1/2 cup (1 stick) butter 1 cup all-purpose flour 4 eggs 1/2 cup sugar 2 t. cinnamon oil for deep frying
Put oil on to heat to about 350 degrees. Mix cinnamon with sugar and set aside. (I put it in a shaker)
Bring water and butter to a boil in a saucepan. Stir in flour, all at once, and cook until mixture forms a smooth ball (about 1 minute)
Remove from heat and beat in eggs, one at a time, until well incorporated and mixture is smooth.
Once oil is heated, drop dough by teaspoons into hot grease, being careful not to overcrowd them. Cook on both sides until golden brown. Drain on paper towels and coat with cinnamon sugar while hot. Continue until all the dough is cooked.
Makes about 4 dozen.
