This recipe is from Heloise, the lady who wrote the newspaper column, 'Hints From Heloise' for decades (Her daughter took it over, after her death) I've used this recipe since the mid-70s.
Heloise's Pimento Cheese Spread
Ingredients:
1 lb. of boxed, soft cheese (American) 4 oz. pimento 1 cup mayonnaise 1/2 cup grated pickles (dill or sweet, depending on your taste)
Directions:
Grate the cheese, then grate the pickles. Combine by adding small amounts of each of the ingredients in layers(i.e. cheese, pimento, mayonnaise, pickles), then mix. Continue until all ingredients are mixed well. Be sure to keep pimento cheese refrigerated!
