Life doesn't have to be complicated and neither do cookies. I made these tonight with salted butter, dark brown sugar, all-purpose flour, and a mix of white chocolate and carob chips. (no leavening!) They were super easy, only took about half an hour to make, and turned out great!
5 Ingredient Chocolate Chip Cookies
1/2 cup butter (salted, unsalted, vegan butter, margarine, shortening, lard) 1 cup sugar (granulated, light brown, or dark brown) 1 egg (or egg substitute) 1 1/4 cup flour (all-purpose, self rising, or bread) 1 cup chocolate chips or pieces (any kind you prefer or have on hand)
1. Preheat oven to 350ºF. 2. Mix the butter and sugar together until completely combined. 3. Add the egg and mix until incorporated. 4. Stir in the flour then the chocolate chips until combined. 5. Drop by rounded teaspoons onto lightly greased baking sheets and bake until lightly browned on the edges.
Makes about 2 dozen cookies.

I made these again today, but without chocolate chips. I used 1 cup of a-p flour, 3/4 cup of oatmeal and 1/4 cup of chopped walnuts, one egg, coconut oil for the grease, and brown sugar.
I just love this recipe because you can be so creative with it, use whatever you have onhand, and be done with a batch of cookies in less than an hour. No stress.

I'll have to try these! I'm glad someone besides me finds cookies stressful. I'd rather clean a bathroom than bake cookies!

So would I! As much as I like cookies, baking them is a major undertaking for me. These are so much easier and you can actually work on them a little at a time, if you want. Since there's no leavening it won't hurt them to sit for a while once they're mixed (or at any point except for baking, really) The only thing that might happen is that the dough could get thick.
I'm going to try just spreading the dough in a cookie sheet and baking it, like a pan cookie, to make it even easier. I'll let you know how that turns out.

Just got the pan cookies out of the oven. They were even easier than making individual cookies and turned out great. I made this batch with butter, white sugar, an egg, a-p flour, and whatever was left in the bag of white chocolate chips (a little less than a cup, I think)
At first I put the dough in a greased cookie sheet, but that didn't work out. There isn't enough dough to cover a cookie sheet and the grease makes it nearly impossible to spread. I dumped it into an ungreased 9x13 pan and that worked out fine. I spread it out with the back of a teaspoon. It seems to give me more control than using a wooden spoon and the dough doesn't clump up on it as bad. Bake at 350, 15-20 minutes (till the edges are lightly browned)
I couldn't remember if you were supposed to cut them while they were hot or let them cool first, so I cut them when they were hot. They cut fine with a sharp knife. I cut them into 32 squares, but you could make them bigger if you prefer.

Oh thank you for trying that out! I'd way rather do a pan cookie than all those aggravating little ones! Sounds like a good versatile recipe for using up those little bits of leftover nuts and chips and stuff.
