Spicy Chicken Sandwich contributed by carla
3 dried ancho chiles, soaked in hot water overnight, drained, stemmed and seeded 1/4 c. coarsely chopped onion 1 large garlic clove, peeled and halved 1 t. white wine vinegar 3/4 c. olive oil 2 T. fresh lime juice salt 1/3 c. mayonnaise 3 whole chicken breasts, poached, skinned and shredded 6 French sourdough rolls butter fresh cilantro
In food processor, combine chiles, onion garlic and vinegar. Process until smooth, occasionally scraping down sides of bowl. With machine running add olive oil gradually through feed tube. Add lime juice and season with salt to taste. (May be prepared up to 2 weeks in advance. Cover and chill.)
In large bowl, combine reserved ancho mixture, mayonnaise, and chicken. Slice rolls lengthwise and hollow out each half. Butter hollowed rolls and toast lightly. Fill with reserved chicken mixture. Serve open-faced topped with cilantro.
