Kicked Up Egg Salad contributed by carla
6 large eggs 3 scallions, including an inch or so of the greens, thinly sliced 1 T. chopped chervil or 2 t. chopped tarragon 1 T. minced parsley 1 T. slivered chives 1/3 c. mayonnaise or more to taste 1-1/2 t. Dijon mustard sea salt and freshly ground pepper vinegar or fresh lemon juice
Cook the eggs and cool. Peel and coarsely mash them with a fork. Add the scallions and herbs, (reserving a few of the chives), the mayonnaise and the mustard. Season with salt and pepper and a few drops of vinegar or lemon juice to taste.
Transfer to a serving bowl and garnish with the reserved chives.
