Hi Y'all!
I've never grown hot peppers before. I have a variety that I can't remember the name of but it ends in Boja. It says on the seed packet that they are a mildly hot pepper that turns brown when mature.
My question is, do you leave your hot peppers on the plants until they are all the way mature or do you pick them green? I ask because I don't want the plants to quit making if I leave these on. What should I do?

I pick green if I catch them in time. If you leave them on for color they will slow production.

I pick them green the first part of the season. Then, when I think I have enough put up, I start letting them turn color (usually red) before I pick them. I usually dehydrate the red ones, but pickle the green ones.

I think I want to use the green ones in salsa. I guess I'll put them in the freezer until the tomatoes are ready. I read an article in Countryside once by a guy who froze all his peppers and tomatoes until he and his brother were ready to have a great big salsa making day.

If you freeze the tomatoes you don't need to peel first. Take them out when you are ready to use them and let just the peel thaw and it will rub right off the still frozen tomato.

Last time, I thawed them out and stuck them right in the food mill. All the peels, seeds, everything, right out the other end. It was great.
I guess I would cut them with a knife for salsa though.
