I made this with the smaller amount of red pepper. I don't like a lot of spice, but it didn't seem too spicy to me. Some of the kids thought it was spicy. Go figure.
Spicy Thai Noodles
Combine 1-2 T. crushed red pepper (less if you don't like very spicy food) with 1/2 cup sesame oil in small saucepan. Cook over medium heat for 2 minutes. Strain out pepper, reserving oil.
In small bowl, whisk together with reserved oil:
1/3 cup honey 1/3 cup soy sauce 1 T. peanut butter (optional)
Set aside.
Boil a package of linguine or angel hair pasta.
Meanwhile, prepare the following and set aside:
1/2 cup chopped green onions 2 carrots, peeled and shredded 1/2 cup chopped cilantro (I left this out because I didn't have any. It was good anyway) 3/4 cup chopped peanuts
Drain pasta and put in a large bowl. Pour sauce mixture over noodles and toss together until noodles are well coated. Sprinkle chopped vegetables over the top and finish with a sprinkling of toasted sesame seeds, if desired. Toss together and serve.
