INGREDIENTS
FOR THE CRUMBLE: 1/2 c. all-purpose flour 1/2 c. brown sugar 1/2 c. shredded Cheddar (I used sharp) 1/4 c. butter
FOR THE PIE: 6 c. peeled and sliced pears 1 T. lemon juice 1/2 c. brown sugar 3 T. cornstarch 3/4 t. ground cinnamon unbaked pie crust
DIRECTIONS: 1. Preheat oven to 400 F. 2. Combine the dry "crumble" ingredients. Cut in flour til the mixture resembles coarse crumbs. Set aside. 3. Toss the sliced pears with the lemon juice. In a separate bowl, combine the other "pie" ingredients. Add that to the pears and toss to coat. 4. Transfer pear filling to pie crust and top with crumble mixture. Bake until the top is golden brown, about 45 minutes (mine too about 40).

I think it would also be good with thinly-sliced apples in place of pears. I intend to try that too....
