INGREDIENTS: 4 c. peeled, cored, and chopped pears 1 package (6T if using bulk) regular pectin 3 1/2 c. granulated sugar, divided (1/4 c. + 3 1/4 c.) 1 1/2 c. packed brown sugar 1/8 t. allspice 1/8 t. nutmeg 3/4 t. cinnamon 1/2 t. butter (optional, to reduce foaming)
PREPARATION: Prep jars. In a large kettle, measure 4 c. of the finely chopped or ground pears. In a bowl, combine the pectin and 1/4 c. sugar. Mix well. Add pectin mixture to pears and cook, stirring, over medium-high. Bring to full rolling boil. Gradually (I added all at once) add remaining sugars and spices and butter (if using...I did). Stirring constantly, return to full rolling boil. Boil hard for 1 full minute. Remove from heat. Continue stirring for 5 minutes (I didn't, since I invert my jars). Skim if needed. Fill jars, leaving 1/4" headspace. Hot water bath for 10 minutes. Makes 6-7 half-pint jars.

Don't know...might be too sweet or it might still be good. I think it would be good with one of the other spices (or cloves) in place of the allspice. Also think it would be yummy with apples instead of pears....caramel apple jam... Yep...that might be another upcoming batch...since we have been given a bunch of apples too....(where oh where did the drooling smiley go?!?)
