Chewy Apple Oatmeal Cookies 1 cup butter, softened 1 cup packed brown sugar 1/2 cup sugar 2 eggs 1 teaspoon vanilla extract 1-1/2 cups all-purpose flour 2 teaspoons ground Cinnamon 1 teaspoon baking soda 1/4 teaspoon salt 3 cups old-fashioned oats 1/2 cup chopped dried apples In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats and apples. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Let stand for 1 minute before removing to wire racks. Yield: 4 dozen.
