I made these a couple of weeks ago, but haven't had the chance to try them until today. I spread cream cheese on crackers (I used the Ritz knock-off) and topped with a slice of jalapeno. Now, I am not a big fan of really spicy food, but this was fantastic! It was just spicy enough and had wonderful flavor. I will definitely be making this again (many times, I'm sure)
Candied Jalapenos
1 (12 oz) jar of pickled jalapeno slices 1 cup water 1 1/2 cups sugar
Drain jalapeno slices and set aside. Bring water and sugar to a boil. Add jalapeno slices and bring back to a boil. Reduce heat and simmer about 30 minutes or until jalapenos look clear and dark green.
Spoon jalapenos into jar that they came in, pour in enough sryup ot cover, cool, and store in refrigerator.
I haven't done it yet, but you could can these by putting the jalapenos and hot syrup into sterilized canning jars, adjusting the lids and rings, and boiling in a hot water bath for about 10 minutes (I really don't believe they need the hwb, but I'm saying it to be on the safe side)

I think these would make great gifts at Christmastime - just slap a ribbon on the jar.
