Mary's Sweet Potato Casserole
Filling :
-About 4 cups cooked, mashed sweet potatoes or squash (or 2 large cans from the store or 1 quart home-canned) -2 eggs -1/2 - 3/4 cup evaporated milk (not sweetened condensed)
Put all ingredients into a bowl and beat with electric mixer until light and fluffy. Turn into greased 1 1/2 quart casserole, top with topping (recipe below), and bake at 350 deg, 30 - 60 minutes, or until set, and topping is brown and bubbly.
Topping :
-1/2 stick butter, softened -1 cup brown sugar, packed -cinnamon (to taste) -1 cup chopped or broken pecans
Mix all ingredients to make crumbs.
