A delicately spiced syrup for pancakes, waffles, French toast, ice cream, bread pudding, or whatever else you might enjoy it on.
Exotic Spiced Syrup
2 cups water 1 cinnamon stick, broken 2 green cardamom pods, crushed a little 2 whole cloves 2 t. lemon juice 3 cups sugar a few threads of saffron for color (optional) 1 t. vanilla extract (optional)
Add spices and lemon juice to the water in a medium saucepan. Bring to a boil. Add sugar, one cup at a time, cooking till dissolved. Once all the sugar is in, bring back to a boil then remove from heat and add saffron and/or vanilla, if using. Cover and allow to steep for 30 minutes or until you remember it again.
Strain syrup. Store in jar in refrigerator.
Makes about 1 quart.
