Anyone got one? Hit me with your faves. I ran out of my home canned kind and need to make some from scratch tonight.

Brown a pound of hamburger and one chopped onion. When the burger is cooked and the onion is tender and clear-looking, stir in some minced garlic (I use 1 heaping teaspoon from a jar). Cook that a minute and stir in 1 (12 oz) can of tomato sauce and 1 (6 oz) can of tomato paste. Fill the tomato sauce can with water and add that, too. Simmer for a few minutes, then stir in 1 level teaspoon of instant coffee (optional, but very good) and a heaping teaspoon of dry oregano. season with salt and pepper, to taste. In all, this takes about half an hour to make. I usually put on the water for the noodles while the hamburger and onion is browning and they get done about the same time.
You can double the tomato sauce and tomato paste to make this go further, if you want. I usually do.

I hope it turns out good for you. My mother learned this recipe from an Italian woman who lived near her during the war (WW2) I've tried other recipes, but always come back to this one.

I use the recipe from the BHG cookbook, but I take liberties based on whim, availability, etc. We generally like whatever we end up with, though, so I'm guessing that the base recipe is a pretty good one.

Kristi, if you want an even faster spaghetti sauce, and one that can be stored on the shelf until you're ready to use it, you might like the spaghetti sauce mix. You just mix up the dry ingredients, then add whatever kind of tomato product you have onhand, along with water, and bring it to a boil. I usually keep a jar of it in the cupboard. Kristi, I think there is a recipe like that in the make a mix cookbook too. I know there's one for chili because I use that one all the time.

Me too. Because of that book, I mostly just can 'tomatoes', and then put a quart in the crock pot with the seasoning mix that makes whatever I'm wanting. So, so easy, and it means the tomatoes are pretty versatile too.
