This recipe makes spaghetti & chicken for one night and chicken parmesan for another. Make your favorite spaghetti sauce (or make one from the links below), but, when you begin simmering it, add enough boneless chicken breasts for two meals for your family. (I use 12) Simmer the sauce and chicken until the chicken is tender. First night, serve spaghetti with chicken on the side. Save leftover sauce, as well as extra chicken. I like to serve this with a salad, olives, and bread & butter. Second night, pour leftover sauce over remaining chicken, top with mozzarella cheese, cover and heat about 30 minutes at 350, or until chicken is heated through, cheese is melted, and sauce is bubbly. I serve this with buttered parmesan noodles and broccoli or asparagus.
