Made these today. They are so good, and super easy!
2 Cups Quick cooking oats 3/4 Cup brown sugar 1 tsp. baking powder 1/4 tsp. salt 1/2 cup butter, melted
Preheat oven to 350° . Mix dry ingredients in a bowl. Stir in butter, and mix well. Press into 8" square baking dish. Bake 20-25 minutes, until just golden. Cool on a wire rack. Cut into squares.
Yum!

Dave devoured half a dozen pretty quick. He'd probably wipe out the pan if I didn't stop him.

Dan loves oatmeal cookies, but I don't make them often because they're a pain in the neck. If he likes these, I'll be making them all the time. They're so easy! (They're almost done)

Yeah, they're healthy and low sodium! Nevermind the half a cup of butter and 3/4 cup of brown sugar.

These are SO good! These will be Dan's 'regulars'. I'm sure he'll be wanting them in his lunch every day.
BTW, y'all, the recipe says to cool them before you cut them. It's NOT kidding! I tried cutting them while they were hot and they were falling apart (just the one I tried to take out of the pan) Now that they're cool, they're perfect.

Yay!!! Glad they came out good! We only have 3 left of that pan I made yesterday, which we didn't start on until after supper. I did not eat all those!!!

The boys got into the cookies last night, so there was only 5 left this morning (out of 9). Dan ate most of those for breakfast. He said, 'These are good!', so I reckon I'll be making them a lot.

These are great i added a 1/2 cup of chopped dried cranberries yummy yummy.Oatmeal and butter cookies are my favorite.

Um, did you ladies grease the pan? I made two batches them according to the recipe above (added raisins to one, orange zest to the other), but it's like concrete. I mean, I think my pans may be ruined. They smell good, but I can't them out. Not a bit. I'll try soaking them...

Okay, my hand is sore, my spatula is bent, most of the cookies are crazy-shaped, and my pans are scratched up, but I (mostly) got them out. The orange ones are really, really tasty. Oh, and I have a pint jar of granola (crunched up bits that made it out of the pan, but not intact).
I think next time, I will line my pans with waxed paper.

I sprayed my pan. I wasn't sure if I should, but, after hearing your story, Sandra, I'm glad I did.
