I'm going to make American Enchiladas tonight. I haven't made them in a long time and they're one of my favorites - Dan's, too. I might make the crepes this afternoon, then reheat them at suppertime. They take a while to make since I have to make so many. I might make the filling ahead of time, too.

I've never heard of American Enchiladas...what do you use for filling?
I am making salmon and broccoli for John. I'll eat leftover pot roast (I hate fish).

Okay, I looked in the recipe book (which is what I should have done before I asked) and found American Enchiladas. They sound really good!

They're one of my favorites. I don't make them very often because they always seem like a lot of work (they're not). I made a triple batch today (about 3 dozen crepes) and have a dozen left over - enough for lunch tomorrow. It took me 15 minutes to make all the batter (I did it in 3 separate batches, then poured them into one bowl), 1 hour in the refrigerator, and 1 hour to cook it. I made the filling while the crepe batter was resting. I had 2 and I am stuffed!

I love tuna casserole, too, but Dan doesn't, so we don't have it often. I should start making it for lunch. The kids all like it.
We had roast beef (I made it yesterday, sliced it, and reheated it in the cooking juices), gravy, mashed potatoes, and steamed broccoli.

Today is my daughter, Belinda's, birthday, so she got to choose what's for supper. She wanted fried chicken, mashed potatoes, macaroni and cheese, corn, and a banana cake with caramel frosting for dessert.
I didn't have a good caramel frosting recipe, so I googled it. The one I chose is the best caramel frosting I've ever had (dumb luck) I posted the recipe in the Desserts section, under Miscellaneous. It was kind of a pain to make, since it had to beat so long. I used a handheld mixer. Next time I'll use the stand mixer, so I can go sit down and let it run.

I think I will have mac and cheese. since I am alone, that will do me fine, for sure. and a pice of homemade bread.

Tonight we're having upside down chicken pot pies. That's what my kids call creamed chicken, peas and carrots poured over biscuits.
