Tonight we're having pork chops on the grill. Either with a dry rub or with barbecue sauce. I'm thinking Parmesan couscous to go with it. Cover your eyes Guimauve - we get the Near East brand and they are really good. I'll make some sort of a veg with it. Not sure if I'll do carrots or green beans.

I am familiar with the label, but we don't have that here (of course...). I think I just prefer the versatility (and cost) of buying it in bulk and adding in my add-ins to suit the meal.
Ds has a performance tonite, so we need to be out of the house a couple of hours before we normally even eat...I am thinking it is going to be salads, cheese, crackers, nuts, fruit.

Did you manage to feed the boy enough to make it through the concert?
We ended up having mac and cheese to go with the pork chops and did a dry rub on them.
Tonight we're having steak, cous cous and a green bean/carrot mix.

This week's lunch is a veggie wrap with hummus. Though I'm thinking that I packed more veggies than will fit on the tortilla. I have cucumber, carrots, red bell peppers and baby portabellas.
Tonight's dinner is tacos. Jim's will be in tortillas, mine will involve a bit a rice.

I like that Near East brand of couscous, too, Michelle. It's not something Dave will eat much of, so it's better for us to just by a little bit at a time. Being a deep south boy, he's more into beans & rice. I found a black beans & rice mix (Louisiana Purchase, I think) that doesn't have peppers in it, and he loves that. If I was smart I'd be canning up a bunch of dry beans this summer to use for convenience the rest of the year. I got some chicken out of the freezer. I'll saute up some squash and green beans and maybe some cherry tomatoes, do something with the chicken, and maybe cook some noodles with that. I'm not real sure exactly how it'll come together, but with enough spices on it, it'll be good!

Did you manage to feed the boy enough to make it through the concert? Haha, the running joke around here!!! I thought I had - but someone told me he was looking like he was wasting away backstage!!! The plan was to eat again when we got home, which he did...then, when we arrived home, the neighbor said he thought he was looking EXTRA skinny...or maybe he has just grown a little taller and just spread out what little he had!!!

The plan was to eat again when we got home, which he did...then, when we arrived home, the neighbor said he thought he was looking EXTRA skinny...or maybe he has just grown a little taller and just spread out what little he had!!! That's too funny. Valerie, if you don't want to grill the chicken, I'd cut it into bite size pieces, brown it, add the veg and some tomato sauce and season it up with some basil and garlic. Then serve it over noodles.

So the weekend was a total eat fest...luckily, we were at a party Saturday afternoon and evening, so he could eat there (someone made some Carolina bbq, and being on the tundra, people are a little set in their ill exposed frozen ways so they weren't eating it - no prob, ds took care of that!!!). Sunday I spent a lot of time cooking, ds spent a lot of time prepping and chopping...
It is REALLY cold today...and ds is in the middle of final exams, so I am thinking it is going to be some eat, then break, then eat again foods...soup is DEFINITELY on the agenda today, probably bean, some quesadillas, veggies, dip, and if ds is starving (more likely than not), I'll make a pot of tortellini and pesto, he can eat round one hot, and then add fresh tomatoes to make it be like salade later on.

Glad that he was able to get some bbq on Saturday Tonight we're having chicken. That's about as far as I've gotten with meal planning.

So on the way home last night, as we were talking about what to have with dinner, I was saying that we had chicken defrosted, Jim was insisting that we had pork chops defrosted. Turns out it was neither, we had put down steaks. So we had grilled steaks, mac & cheese and a bean (green and wax) and carrot mix.
Tonight we're grabbing dinner out here near campus.

Tonight I am making grilled eggplant and zucchini, pasta primavera, Italian bean soup, fruit salade (hopefully...it is veggie box day), nuts, yogurt. If there isn't appropriate fruit salade fruits in the box, I will bake some apples stuffed with oatmeal in the grill.

Guimauve, I enjoy your ongoing saga of trying to keep the boy fed. Kids keep life interesting. Taste of Home sent me a free issue, trying to entice me into re-subscribing. I'm still not impressed, and don't plan to send them any money. I did find an interesting recipe for a green bean and potato salad that I just happen to have the ingredients for. I think I might make that in a little bit, and give half to Beck & Brandon. Dave won't be interested in eating that. For supper, I'll keep working on these leftovers in the fridge. We're both trying to cut back a bit on our portion size, and it's making for more leftovers! LOL on the Carolina barbecue! I remember the first time we were doing some kind of potluck thing for a school I went to and one lady said she would bring barbecue. My mom is from out west and my dad was from up north, so when they said barbecue, they meant food cooked on a grill. Once we moved up to Jacksonville, we found out what barbecue meant.

So tonight is the pork chops that Jim thought we were having on Tuesday I was thinking of doing a rice with it, but I may need to do couscous as it is quicker (see the what are you doing thread).

Valerie...some days it isn't so amusing trying to feed that child, but when I retell, it is a little better! My brother and I ate a LOT, ds trumps the 2 of us together...I grew up eating BBQ (northern/KC style), so when I SAY barbecue, I MEAN pulled meat of some sort, NOT the act of cooking ON the grill or BBQ (which COULD make sense except most people mean grill when they say barbecue for the means of cooking...iow, don't get me going!!!). I will NEVER EVER FORGET the lake of tears and mountains tantrums when I first moved here and had a housewarming dinner, I invited everyone for BBQ...I thought I was clear, I said BBQ as a noun, not food ON the bbq!...all the children coming thought they were getting hot dogs on the grill, when they saw the meat on the grill, in the oven and then in serving bowls, it was a complete and total FREAK OUT....totally was NOT fun. I have since introduced them to all kinds of proper bbq, but they aren't overly convinced...that just leaves more for ds, haha.
I am tired, unmotivated and mentally frazzled...ds is out tonight, so I am just making salade.
